Likewise the equally great Hugh Johnson - the taste of Chablis is the taste of minerals hewn from the centre of the earth. Chablis is Chardonnay but true Chablis, such as that of Monsieur Droin, is unique. It is a wine that speaks of place and that could come from nowhere else on earth.
If Grenache provides the flesh of the Southern Rhone and Syrah its visage, Mourvedre provides the spine. A grape which wants its feet in the water and the sun on its back, it reaches its apogee in Bandol, beside the silvery sea. Oak Wine Barrel Cheeseboard
Specially commissioned by Top Note Design. These gorgeous cheeseboards/sharing platters are handmade for us in Umbria, Italy out of reclaimed wine barrels which have been used to store Sangiovese wine. Shaped to echo a wine bottle, they are naturally two tone; the wine-seeped top contrasts beautifully with the golden oak of the underside - both sides can be used for serving cheese or antipasto. Each hand-crafted board is unique and shows slightly different colour, grain and size. Finished off with the maker's distinctive, red dot signature all boards come with details of their provenance. Care for your board: This is a natural product. Do not allow the board to soak in water. Treat with olive oil from time to time.

Pierre Yves Colin Morey
Pierre-Yves represents a new breed. Soaring land prices coupled with the Napoleonic system of inheritance whereby assets are shared out equally amongst the next generation, mean that today's generation will rarely have enough land to satisfy their or their customers' demands. So growers such as Pierre-Yves buy in grapes from equally conscientious growers to augment their own meagre production and then raise intense complex wines (nevertheless in tiny quantities) that advertise white burgundy as the greatest white wine on the planet. But you won’t see foils like this anymore. In order to reduce the chances of premature oxidation, Pierre-Yves now seals all his wines in wax to ensure no air can get in at all. With such attention to detail, passion and drive the results can only go one way.
