When is the whole greater than the sum of its parts? When the wine is made by Domaine de la Soufrandise, for one. Burgundy is seen by many as the apogee of terroir, of the expression in the glass by one grape of one place. But what if your holdings are too many and too small? Nicolas Melin has overcome this by vinifying his 20 plots separately and then blending them to create a greater expression of place than any single plot could do on its own; the wines speak of no other place on earth than Pouilly Fuisse and the northern reaches of the Macon. And this is what the great wine writer Harry Yoxall was put in mind of when tasting Chablis. Likewise the equally great Hugh Johnson - the taste of Chablis is the taste of minerals hewn from the centre of the earth. Chablis is Chardonnay but true Chablis, such as that of Monsieur Droin, is unique. It is a wine that speaks of place and that could come from nowhere else on earth.
Burgundy is complicated; it is that simple. So, to better understand a region of 25 villages, 116 appellations and over 4,500 growers, where do you start? You start with a wine merchant (negociants), such as Louis Latour, who buy the tiny outputs of myriad growers, iron out their idiosyncracies and, via the quality guarantee of their own label, introduce the world to the wines that have moved princes and pauper alike to raptures that claret can only dream of. In Burgundy the name is everything. Many familiar names, through marriage and inheritance, crop up in communes the length of the Côtes. Domaine Leflaive represents one of the pinnacles of white burgundy, the Domaine’s Bâtard Montrachet selling for incredible prices. So look elsewhere within the family. Olivier Leflaive, a cousin, has set up on his own and, with his DNA and contacts, now crafts seductive whites that more than hint at the stellar heights achieved by his cousin but which are nevertheless within the reach of us mortals. Pierre Yves Colin Morey
Pierre-Yves represents a new breed. Soaring land prices coupled with the Napoleonic system of inheritance whereby assets are shared out equally amongst the next generation, mean that today's generation will rarely have enough land to satisfy their or their customers' demands. So growers such as Pierre-Yves buy in grapes from equally conscientious growers to augment their own meagre production and then raise intense complex wines (nevertheless in tiny quantities) that advertise white burgundy as the greatest white wine on the planet. But you won’t see foils like this anymore. In order to reduce the chances of premature oxidation, Pierre-Yves now seals all his wines in wax to ensure no air can get in at all. With such attention to detail, passion and drive the results can only go one way.
